RIB ROAST 
Rib roast, any size

Rub in salt, pepper, other seasoning to taste.

Leave roast at room temperature. Preheat oven to 375 degrees. Put roast, rib side down, in rack in pan and cook for 1 hour. Turn oven off and do not open door. For rare, cook at 375 degrees for 30-40 minutes before serving. Add 15-20 minutes for medium.
