COUNTRY - STYLE CHICKEN NOODLE
SOUP
 
1 cleaned stewing hen (4 lbs. cut up)
2 1/2 qts. water
2 tsp. salt
1 tsp. pepper corns, bruised
1 sm. onion, sliced
1 carrot, sliced
1 bay leaf
1 tbsp. parsley, chopped
3 c. cooked noodles

Bring hen to a boil in water, adding water as needed; skim off fat. Add remaining ingredients, except noodles. Boil 20 minutes. Add noodles and cook 20 minutes longer. Taste to correct seasonings. Serve piping hot.
