FRUITED CHEESE CAKE 
1 pkg. yellow cake mix
2 tbsp. oil
2 (8 oz.) pkg. cream cheese
1/2 c. sugar
4 eggs
1 1/2 c. milk
3 tbsp. lemon juice
3 tsp. vanilla
1 can pie filling (your choice--cherry, blueberry, pineapple, etc.)

Preheat oven to 300 degrees. Set aside 1 cup cake mix. In a large bowl, combine rest of cake mix, 1 egg and oil. Mixture should be crumbly. Press mixture into bottom and 3/4 up sides of a greased 9x13x2 inch pan or 2 smaller ones.

Mix cream cheese and sugar by hand. Add 3 eggs and 1 cup cake mix and beat for 1 minute on medium speed. Continue beating on slow speed and add milk and flavorings and mix until smooth. Pour into crust and bake for 50-60 minutes until firm. Cool on racks away from drafts so cake will not crack. Top with filling.
