BAKED GRITS 
1 c. quick grits
3 c. water
1 tsp. salt
1/2 lb. Velveeta cheese
1 stick butter
4 beaten eggs

Cook grits in salted water, stir in butter and cheese. Cook until done. Let cool. When cool, stir in eggs. Pour into casserole dish.

Bake at 350°F for 45 minutes.
