MACARONI AND SAUSAGE CASSEROLE 
1 lb. bulk pork sausage
1/4 c. olive oil
1 lg. clove garlic, crushed
1 med. size yellow onion, sliced
1 can tomato paste, 6 oz.
Salt
Pepper
Pinch of oregano
1 bay leaf
2 c. water
1 lb. macaroni
1/2 c. grated Parmesan cheese

Cut the sausage into 1 inch pieces and cook over a slow fire until browned. Heat 1/4 cup of olive oil. Add a large clove of crushed garlic. Cook 1 minute. Put sliced onion and sliced mushrooms into the pan and cook until onion is soft. Add sausage, tomato paste, salt, pepper, oregano, bay leaf and water. Cover and simmer for about 1 hour. Drain and place in an ovenproof dish. Sprinkle 1/2 cup of Parmesan cheese and bake in oven at 350 degrees until lightly brown.
