REGINA'S SCRATCH CHOCOLATE CAKE | |
2 c. sugar 2 c. flour 4 tbsp. cocoa (heaping) 1/3 c. oil 1 c. water 1 stick butter 1 tsp. vinegar 1/3 c. milk 1 tsp. vanilla 3 eggs ICING: 1 stick butter 1 c. powdered sugar 1/4 c. oil 4 tbsp. cocoa (heaping) 6 tbsp. milk Mix first 2 ingredients together and set aside. Mix cocoa, oil, water and butter and bring to a rapid boil. Add to flour and sugar. Mix vinegar in milk; add vanilla and eggs. Blend with flour mixture. Beat until well blended. Bake in 13 x 9 inch baking dish for 30 minutes at 375 degrees. ICING: Mix all ingredients and cook on medium heat until mixture comes to a full boil. Stir constantly. Add nuts and coconut and spread on hot cake. |
