CHOCOLATE RUM COOKIES 
5 egg whites
5 oz. sugar
6 oz. shelled pecans, finely chopped
12 oz. semi-sweet chocolate pieces, melted
3 tsp. rum

Beat egg whites and sugar until very stiff. Blend in melted chocolate, nuts and rum. Let stand 15 minutes. Spoon mixture onto cookie sheets that are lined with aluminum foil. Allow room for spreading.

Bake in oven at 325 degrees for 15 to 20 minutes. When done, bottom of cookie should still be moist.
