ITALIAN SAUSAGE WITH BEANS 
8 Tennessee Pride Italian Sausage Links
2 tbsp. olive oil
1/2 c. cooking sherry

Saute links in oil, over moderate heat, turning occasionally. When links are brown add sherry, cover and lower heat. Cook approximately 5 minutes. Remove cover, turn up heat and cook out sherry. Set links aside and keep warm. Reserve pan juices.

BEANS:

1 c. chopped onion
1 c. chopped celery
3 tbsp. olive oil
1 tsp. rosemary
2 bay leaves
2 cloves garlic, minced
1 c. chopped, seeded tomatoes
1 can cannellini beans, drained
Salt and freshly ground black pepper

Preheat oven to 375 degrees.

In an ovenproof casserole saute onion and celery in olive oil. Simmer, covered, for approximately 10 minutes or until onion wilts. Then add herbs, tomatoes, beans and salt and pepper to taste. Cook, covered, for 5 minutes. Add sausage links and 3 tablespoons of reserved pan juices. Cover and bake for 20 to 30 minutes.

To serve: Serve hot straight from the covered casserole.
