LEMON GARLIC CHICKEN | |
1 whole chicken (fryer) or 4 chicken breasts w/bone in and skin attached 1/4 c. olive oil 1/2 fresh lemon 5-6 fresh garlic (crushed or finely chopped) 1 tsp. salt 1 tsp. black pepper 1 tsp. oregano, dried Mix together and marinate; olive oil, lemon juice, chopped garlic, salt, pepper and oregano. Blend well and set aside. Broil chicken starting with skin side down turning once. When done cut up chicken to serving pieces (cut chicken breast in halves). Pour lemon/olive oil marinate over chicken making sure all pieces are well coated. Put chicken back under broiler for about 5-minutes turning once. Remove chicken to serving platter and pour any remaining marinate over chicken and serve. Serve with pasta or steamed vegetables. If serving with pasta place pasta on platter with chicken on top so the pasta can absorb the marinate flavor. |
