THUMBPRINT COOKIES 
1/4 c. packed brown sugar
1/4 c. butter, softened
1/4 c. shortening
1 egg, separated
1/2 tsp. vanilla
1 c. flour - can use whole wheat flour
1/4 tsp. salt
3/4 c. finely chopped nuts
Jelly

Heat oven to 350 degrees. Mix brown sugar, butter, shortening, egg yolk and vanilla. Stir in flour and salt. Shape dough into 1-inch balls. Beat egg white slightly. Dip balls into egg white; roll in nuts. Place about 1-inch apart on ungreased cookie sheet; press thumb deeply in center of each.

Bake until light brown, about 10 minutes. Immediately remove from cookie sheet. Cool. Fill thumbprint with jelly. If using self-rising flour, omit salt.
