EGGPLANT PARMESAN 
2 tbsp. olive oil
2 sprigs parsley
1 can tomatoes
1 tsp. salt
1 tsp. basil
1/2 c. Parmesan cheese
1 onion, chopped
1 clove garlic, minced
1 can tomato sauce
1 tsp. pepper
1 tsp. oregano
1/2 lb. Mozzarella cheese, shredded

Lightly brown peeled and sliced eggplant in olive oil. Set aside. Make sauce of rest of ingredients except cheese. Layer eggplant, sauce and cheese in baking dish. Bake at 350 degrees for 25 minutes.
