SPICE CHIFFON CAKE | |
2 c. flour 1 1/2 c. sugar 3 tsp. baking powder 1 tsp. salt 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. allspice 1/2 tsp. cloves 1/2 c. oil 7 egg yolks 3/4 c. cold water 1 c. egg whites 1/2 tsp. cream of tartar Mix all dry ingredients. Add oil, egg yolks and water. Stir until smooth. Beat egg whites and cream of tartar until stiff peaks form. Gently blend together with egg yolk mixture. Pour in angel cake pan. Bake at 325 degrees for 75 minutes. Cool upside down. Frost with Maple Frosting. MAPLE FROSTING: 1/4 c. shortening or butter 1/2 tsp. salt 1/3 c. maple syrup 2 tsp. vanilla 3 c. confectioners' sugar 3 tbsp. milk (use 2 tbsp. with butter) Combine first 4 ingredients and 1 cup sugar. Add milk and remaining sugar alternately, mix until smooth. |
