PUMPKIN SPICE BARS 
4 eggs
2 c. sugar
1 (15 oz.) can solid-pack pumpkin
1 c. vegetable oil
2 c. flour
2 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1/2 c. dried cranberries
1 (16 oz.) can or 2 c. cream cheese frosting

In a mixing bowl, beat eggs, sugar, pumpkin and oil until blended. Combine the flour, baking powder, cinnamon, baking soda, salt, ginger and cloves; add to pumpkin mixture just until combined. Stir in cranberries. Pour into a greased 15 x 10 x 1-inch baking pan.

Bake at 350°F for 25 to 30 minutes or until a toothpick inserted near the center comes out clean. Cool completely on a wire rack. Frost with cream cheese frosting.

Yield: 2 1/2 dozen bars.
