EGGPLANT CREOLE 
1 eggplant, cubed and peeled; boil in salt water 10 minutes.
1 onion
1 green pepper
1 can tomatoes, strained
3 tbsp. flour
1 tbsp. brown sugar
1/2 tsp. clove
Mushrooms; optional

Saute onion and green pepper in butter, then add remaining ingredients.

Simmer 10 minutes. Pour over eggplant. Bake in 375 degree oven for 30 minutes. Add grated cheese and bread crumbs. Return to oven for 10 minutes.
