SHRIMP SALAD | |
1 (4 oz.) can broken shrimp, drained and washed 1 (3 oz.) pkg. lemon Jello 1 c. boiling water 2/3 c. mayonnaise 2 tbsp. lemon juice 1/4 c. chopped pimentos 1/2 c. diced celery 1/2 c. chopped stuffed olives 1/3 c. green peppers Dissolve Jello in 1 cup boiling water. Cool until slightly jelled. Add mayonnaise thinned with the lemon juice. Add pimentos, celery, pepper and olives. Slowly fold in broken shrimp. OPTIONAL: Add a little grated onion to taste. Refrigerate at least 4 hours. |
