FRUIT COCKTAIL CAKE 
1 (8 oz.) cream cheese, softened
2 sticks butter, softened
1 1/2 c. sugar
1 1/2 tsp. vanilla
4 eggs
2 1/2 c. plain flour
1 1/2 tsp. baking powder
1 (17 oz.) can fruit cocktail, drained
1/2 to 3/4 c. chopped walnuts

Preheat oven to 350 degrees. Grease and flour bottoms of 2 loaf pans. Blend cream cheese and butter well. Add sugar and vanilla and cream well. Add eggs, one at a time, mixing well after each addition. In separate bowl, combine flour and baking powder, blend well with creamed mixture. Stir in drained fruit and nuts. Pour 1/2 mixture in each pan. Bake for 1 hour. Test for doneness with toothpick. Excellent served from the refrigerator.
