SOPAPILLAS 
2 c. sifted flour
1 tsp. salt
1/2 c. water
2 tsp. baking powder
2 tbsp. shortening

Sift together dry ingredients and work in shortening and water. Form into a soft ball and roll on floured board. Cut into squares and/or diamonds. Deep fry at 400 degrees pushing under oil 2 or 3 times to ensure puffing. Cook on both sides until nicely browned.

These may be served with honey and butter or a combination of brown sugar and cinnamon can be used to roll sopapillas in directly after coming out of hot oil.
