AMARETTO 
1 lemon
3 c. sugar
2 c. water
3 c. vodka
3 tbsp. brandy
2 tbsp. almond extract
2 tsp. vanilla extract
1 tsp. chocolate extract

Peel lemon, leaving inner white skin on fruit. Cut rind into 2 x 1/4 inch strips. Combine lemon rind strips, sugar and water in a saucepan. Bring to a boil, cover, reduce heat and simmer 30 minutes. Remove from heat, remove lemon rind and discard. Refrigerate liquid. Stir in vodka and remaining ingredients. Store in an airtight container. Yields 1 1/2 quarts.
