FRIED SHRIMP 
1 lb. med. sized shrimp
2 egg yolks
1/4 tsp. salt
1/2 c. water
3/4 c. flour
1/4 c. cornstarch
1 tbsp. oil

Shell raw shrimps leaving tails on, slit along back (be careful not to cut through) and remove vein. Flatten out shrimps.

BATTER:

Beat the yolk with water and add half of the flour with salt. Then add oil and the remainder of the flour. Dip in batter and deep fry shrimps. Sprinkle with Chinese season salt. Could be eaten with catsup mixed with hot sauce or dip in soy sauce mixed with mustard.
