SPLIT PEA SOUP 
1 bag dried split peas
14 c. cold water
Ham shank
2 med. onions
2 slices lemon
3 sm. carrots, sliced
4 stalks celery, chopped
Pepper and salt to taste

Soak peas overnight in 2 quarts of water. Combine the peas, ham, carrots, celery, lemon, onions, pepper, and salt and 7 cups more water. Cover and bring to a boil and simmer 3 hours until peas are tender and soup is thick. Very good in winter.
