SWEET POTATO CASSEROLE 
3 c. sweet potatoes, mashed (2 cans, vacuum packed)
1/2 c. granulated sugar
2/3 stick butter
2 tbsp. vanilla (divided)
2 eggs, well-beaten

Combine sweet potatoes, sugar, butter and 1 tablespoon vanilla. Beat well. Beat together well remaining vanilla and eggs. Put in greased 1 1/2-quart casserole.

TOPPING:

1/2 c. brown sugar, packed
1/2 stick butter
1/3 c. flour
1/2 c. pecans, chopped

Sprinkle on top of casserole. Bake 45 minutes at 350 degrees. One and a half recipe fits a 9 x 13-inch pan.
