PUMPKIN NUT BARS | |
1/2 c. shortening 1 c. brown sugar 2 eggs 1 tsp. vanilla 1 c. sifted all-purpose flour 1 tsp. cinnamon 1/2 tsp. each baking powder and baking soda 1/4 tsp. each ginger and nutmeg 2/3 c. pumpkin 1/2 c. chopped walnuts FROSTING: 1 1/2 c. confectioners' sugar 2 tbsp. each shortening and orange juice 1 tbsp. grated orange rind Cream shortening and sugar; add eggs and vanilla. Sift together dry ingredients; add in thirds alternately with pumpkin; fold in nuts. Spread in greased 9 x 13 inch pan. Bake at 350 degrees for 20 minutes. Cool. Combine ingredients for frosting; beat until smooth. Frost and cut into bars. |
