OATMEAL PUDDING 
2 1/4 c. quick oatmeal
3/4 c. brown sugar
3/4 c. raisins or dried cranberries
1 tsp. cinnamon
1/2 tsp. salt
3 1/2 c. skim milk
4 egg whites
1 tbsp. vegetable oil
1 tbsp. vanilla

Combine oats, brown sugar, fruit, cinnamon and salt. Mix well. Combine milk, egg whites, oil and vanilla. Add to dry ingredients. Mix well.

Bake in a preheated oven at 350°F in a 9 inch pan for 50 to 100 minutes or until center is firm to the touch. Cool slightly. Serve with milk, yogurt and fruit, if desired. Store left over pudding tightly covered in the refrigerator.

Makes 8 servings.
