CRANBERRY HOLIDAY SALAD 
2 (3 oz.) boxes orange Jello
1 1/4 c. boiling water
2 c. cold water and pineapple juice
1 (16 oz.) can whole cranberry sauce
1/2 c. celery, chopped very fine
1 can crushed pineapple
1 can mandarin orange slices

Add boiling water to Jello. Add cranberry sauce to the hot mixture and stir until dissolved. Drain the crushed pineapple, reserving liquid. Add enough water to make 2 cups. Add to the Jello and cranberry sauce and stir. When it starts to set, stir in pineapple and celery. Place in a mold and decorate with lettuce and mandarin oranges or pineapple pieces. Delicious and very festive.
