CRACKLING CORN BREAD 
1 1/2 c. corn meal
1 tsp. salt
2 tbsp. all-purpose flour
3 tsp. baking powder
1 egg, beaten
1 1/4 c. milk
1 1/2 c. cracklings

Sift meal with salt, flour, and baking powder. Beat egg into milk; add to dry ingredients, mixing well. Stir in cracklings.

Turn batter into a greased 9-inch square pan. Bake at 425 degrees for 20-25 minutes or until done and golden brown. Cut into squares and serve at once. Makes about 16 (2-inch) squares.
