WESTERN CAROLINA MUSTARD SAUCE 
1 cup cider vinegar
1 cup vegetable oil
6 tbsp Dijon mustard
2 tbsp maple syrup or honey
2 tbsp Worcestershire sauce
2 tsp salt
2 tsp red pepper sauce
Ground black pepper to taste

Combine all ingredients. For best results, use immersion blender to create an emulsion. Perfect for pulled pork.
