PEACH COFFEE CAKE 
1 1/2 c. buttermilk baking mix
1 tbsp. granulated sugar
1 tsp. ground ginger
3 med. peaches, pared, pitted and sliced
1/4 tsp. ground allspice
1/2 c. orange juice
1 lg. egg
1 tsp. vanilla extract

Spray an 8 inch round baking dish with non-stick cooking spray, set aside. In medium bowl combine all ingredients except peaches until mixed. Spoon batter evenly into prepared dish. Arrange peach slices on top of batter. Microwave on high 8 minutes, rotating the dish once. Microwave on medium 5 minutes longer. Let stand 5 minutes before serving, serve warm or t room temperature. This treat is ready to serve in less then 30 minutes. Yield: 8 servings, 126 calories, 3 fats.
