LOW CHOLESTEROL CAKE 
1 carton Egg Beaters (equals 4 eggs)
2 c. sugar
2 c. plain flour
2 tsp. baking powder
1 c. vanilla soy "milk"
1 stick corn oil butter
1 tsp. vanilla

In electric mixer, beat Egg Beaters, add sugar and beat well. Sift together flour and baking powder. Mix into egg mixture. Put butter into soy mixture in a glass container. Put into microwave and bring to a boil. Pour into batter, add vanilla and mix well. Bake in a well-greased and floured bundt pan at 350 degrees for about 45 minutes.

CHOCOLATE GLAZE:

2 oz. chocolate
2 tsp. butter
1/4 c. coffee
1 tsp. vanilla
2 c. sifted confectioners' sugar

Melt chocolate and butter in microwave. Add coffee, vanilla, and confectioners' sugar.

Since microwave ovens vary in power, you may need to adjust your cooking time.
