BLUE CHEESE WAFERS | |
1 c. crumbled blue cheese (4 oz., room temp.) 1/4 c. butter, softened 1 c. flour 1 c. walnut pieces, finely chopped In small mixing bowl, combine cheese and butter. Cream until fluffy. Mix in flour and walnuts to blend thoroughly. Form into a log about 2" in diameter and 12" long. Wrap in wax paper. Chill until firm, about 1 hour. Cut log into slices, 1/4" thick. Place 1/2" apart on baking sheets. Bake in 375 degree oven 12 to 14 minutes, just until bottoms are lightly browned. Transfer to racks to cool. Store in air tight container. Serve for dessert with fresh fruit and a selection of cheeses. This kitchen tested recipe may be doubled. Store logs securely wrapped in freezer up to 1 month. Store in refrigerator up to 1 week. Slice and bake as needed. |
