SQUASH SQUARES | |
1 lb. yellow squash, cut into 1/2" slices 1/2 c. onion, chopped 1/4 c. butter, melted 1 c. biscuit mix 4 eggs, beaten 1/4 c. vegetable oil 1 clove garlic, minced 1 tbsp. dry onion soup mix 1/2 tsp. seasoning salt 1/2 c. grated cheddar cheese Cook squash and onions in boiling water 10 to 15 minutes. Drain and mash, add butter and set aside. Combine biscuit mix, eggs, vegetable oil, garlic, soup mix and seasoning salt. Beat well. Stir in squash mixture and cheese. Pour mixture into a greased 13"x9" baking dish. Bake at 350 degrees for 45 minutes or until golden brown. Let stand for 10 minutes before serving. Yield: 12 servings. |
