SWEET POTATO TARTS 
4 c. cooked & mashed potatoes
1 to 2 c. orange juice
4 tbsp. butter, melted
3 tsp. nutmeg
2 c. sugar
4 eggs
1 tsp. salt

Mix potatoes and sugar well. Add butter and blend. Add eggs, one at a time, beating well. Stir in orange juice, nutmeg and salt. Put in 24 frozen tart shells and bake in a 325 degree oven for 35 to 45 minutes or until well set.
