CUCUMBER RELISH 
12 lg. cucumbers, peel & remove seeds, chop
2 c. chopped onions
1/2 c. salt
3 c. vinegar
1 c. flour
6 c. sugar
1 tsp. turmeric
1 tsp. celery seed
1 tsp. mustard
1 c. vinegar

Add salt to vegetables (cucumbers and onions) and set overnight, drain. In pan, heat 3 cups vinegar. In bowl mix flour, sugar, turmeric, celery seed, mustard and 1 cup cold vinegar to make a paste. Add to hot vinegar and cook, stirring until thick. Add cucumbers and onions and cook slowly 10 minutes. Bottle.
