SWEET POTATO PIE 
1 9 inch pie crust unbaked
2 eggs
1 c. sugar
1 tsp. salt
1/2 tsp. nutmeg
1 c. milk
2 tbsp. butter
1 1/2 c. sweet potatoes mashed

In a pan, boil sweet potatoes until tender. Drain. Mash sweet potatoes, set aside. In a mixing bowl combine eggs, sugar, salt, nutmeg, milk and butter, mix well; add potatoes and blend until smooth. Pour into unbaked pie crust; bake at 450°F for 10 minutes, reduce heat to 350°F bake for 30 to 40 minutes.
