PUFFED APPLE PANCAKES 
4 tbsp. melted butter
4 lg. eggs
3/4 c. milk
3/4 c. flour
1 apple, peeled & sliced thin
1/4 c. brown sugar
1/4 c. white sugar
2 tbsp. lemon juice
1/4 tsp. vanilla
Cinnamon to taste

Preheat oven to 425 degrees. Pour butter into baking dish. Combine eggs, milk, flour and white sugar. Stir until blended. Pour into baking dish. Toss apple slices with brown sugar, lemon juice, cinnamon and vanilla until coated. Arrange apple slices on top of batter. Bake until pancake is puffed and golden brown, approximately 15 minutes.
