PUFFED OVEN PANCAKE 
2 tbsp. Butter
3 Eggs
1/2 c. All-Purpose Flour
1/2 c. Milk
1/4 tsp. Salt
Powdered Sugar

Place butter in a 10 inch oven proof skillet. Place in 400°F oven for 3-5 minutes or until butter is melted. In a bowl, beat eggs. Add flour, milk and salt. Beat until smooth. Immediately pour into hot skillet.

Bake about 25 minutes or until puffed and browned. Meanwhile, prepare Apple-Raisin Sauce. Sprinkle pancake with powdered sugar and cut into wedges. Serve with sauce.

Serves 6.

Apple Raisin Sauce:

2 large Apples, peeled, cored, sliced thin
3/4 c. Apple Juice or Water
1/3 c. Raisins
2 tbsp. Sugar
1/4 tsp. Cinnamon

Simmer, covered until apples are just tender. Stir together 2 tbsp. cornstarch and 2 tbsp. cold water. Add to apple mixture. Cook and stir until thickened and bubbly. Stir in 1 tsp. butter. Keep warm.

Makes 2 cups.
