TEXAS PECAN OATMEAL MUFFINS 
1 c. oatmeal
1 c. milk or water or buttermilk
1/3 c. brown sugar
1 tsp. baking powder
2 eggs
1/4 c. oil
1/2 tsp. salt (optional)
1 c. (1/2 whole wheat and 1/2 white) flour
1/2 c. chopped pecans

Preheat oven to 350°F. Soak oats in milk/water for 1/2 hour. Add sugar, baking powder, eggs, oil, salt. Then stir in flour and nuts just until blended. Bake in greased loaf pan or muffin cups for 20-25 minutes until done. Insert knife to test; if clean, then it's done.
