TEXAS CORNBREAD SALAD 
4 green onions, chopped
1 box Jiffy cornbread mix
1 green pepper, chopped
1 tomato, chopped
3 to 4 radishes, sliced
2 tbsp. mustard
1/4 c. creamy cucumber or ranch dressing
1/2 tsp. salt and pepper
1/4 c. mayonnaise
1 lb. bacon, chopped, crisp fried

Prepare cornbread using package directions. Cool and crumble. Combine all ingredients in serving bowl. Mix well. Chill in refrigerator.

COMMENTS: If I double this recipe, I still use only 1 pound bacon and just add a few more vegetables. You could increase the dressing until it's of a consistency you want.
