WASHBOARD COCONUT OATMEAL
COOKIES
 
1 c. packed brown sugar
1 c. white sugar
1 c. shortening (1/2 Crisco and 1/2 butter)
2 beaten eggs
1 tsp. salt
1 tsp. vanilla
1 1/2 c. flour
1/2 tsp. baking powder
1 tsp. baking soda
2 c. quick oatmeal
1 c. coconut

Cream the brown and white sugar with the shortening. Add the eggs and blend well. Add the vanilla and all the dry ingredients. Stir in oatmeal and coconut by hand. This dough is quite stiff. You may want to mix with your hands. Make in balls or drop by spoonfuls and flatten with fork. Makes 60 cookies. Grease cookie sheets and bake at 325 to 350 degrees for 8 to 10 minutes. Take out before they look quite done.
