EGG FOO YONG 
4 c. bean sprouts
3 eggs, beaten
1/2 tsp. salt
1/2 c. onion, chopped
1 pkg. brown gravy mix
2 tsp. soy sauce
1 tsp. sugar
Oil for frying
Garnish with 4 green onions, sliced

Cut bean sprouts in 1-inch lengths. Mix with eggs, salt and onions. Heat oil in skillet. Spoon mixture into pan and flatten to make 3-4 inch pancakes (about 1/3 cup). Fry until browned on both sides. Keep warm while remaining pancakes fry. Arrange in circle around plate, overlapping edges as necessary.

Make gravy as directed. Add soy and sugar. Spoon over pancakes. Do not drown. Sprinkle green onions over gravy.
