GINGERBREAD PANCAKES 
3 eggs
1/2 c. buttermilk
1/4 c. brewed coffee
1/2 tsp. salt
1 1/2 tsp. baking soda
1 tbsp. cinnamon
1 tbsp. nutmeg
1/4 c. brown sugar
1/2 c. water or milk
2 1/2 c. flour
1 tsp. baking powder
1 tsp. ground cloves
1 tbsp. ground ginger
4 tbsp. melted butter

Cream eggs and sugar; add buttermilk, water and coffee. Sift dry ingredients together and combine with creamed mixture. Add melted butter and stir until mixed well. Cook on Pam sprayed greased griddle. Serve with maple syrup, honey or molasses.
