HATTERAS CLAM CHOWDER 
Everytime my husband and I go to the outer banks in North Carolina, we get Hatteras clam chowder. I have searched everywhere for a recipe, and couldn't find it. So I guessed, and guessed right. Very low fat too!

1 large onion chopped
4 cloves garlic minced
1 celery heart (inner pale green part) chopped, incl leaves
20 baby carrots sliced thin
2 medium potatoes cubed
4 tbls olive oil
7 slices soy bacon cooked and crumbled
32 oz vegatable broth
2 8 oz bottles of clam juice
4 cans 6.5 oz chopped clams
1 tbls oregano
freshly ground pepper

Heat olive oil in soup pot. Saute garlic, onions, celery and carrots until onions become clear.

Add potatoes, and stir in vegetable broth, clam juice, clams and soy bacon.

Add oregano and freshly ground pepper.

Simmer for an hour until vegetables are soft.

I tried this recipe this past week end and it was easy to prepare. The biggest surprise was the wonderful flavor. Typically I would make a creamy chowder but in sted tried this one and it was great. Will do again.

Since I ran across this recipe, I feel I have to comment. My relatives would roll in their grave if they saw the above! Celery,carrots,bacon and canned clams? I don't think so. My grandmothers and my recipe are the same (I am 67 years old). Salt pork, potatoes, onions, clams and cornmeal dumplings. Simmered a long time. That's it.

I used this recipe and it turned out great! That said, I did use choice cut bacon rashes and I substituted my homemade fish stock instead of the vegetable stock. I discovered Hatteras chowder while vacationing in the Outer Banks and it has turned into my favorite chowder. This recipe came closest to it.
