APPLE CINNAMON MUFFINS 
1 egg
1/2 c. milk
1/4 c. oil
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 c. apple, grated

Heat oven to 400 degrees. Grease or spray bottoms of muffin pans with Pam. Beat egg; add milk and oil. Mix in remaining ingredients. Batter will be lumpy. Pour into muffin pans and top with nut crunch topping.

NUT CRUNCH TOPPING:

1/3 c. packed brown sugar
1/3 c. nuts, chopped
1/2 tsp. cinnamon

Bake for 20-25 minutes.
