BEEF STICK 
4 lbs. lean ground beef
1/4 c. Morton Tender Quick salt

Mix well and refrigerate overnight.

Next day add:

2 tbsp. liquid smoke
1 tsp. allspice (scant tsp.)
1 tsp. garlic powder
1/2 tsp. ginger
2 tsp. coarse ground pepper
2 tbsp. brown sugar

Mix well and divide into 3 or 4 balls. Roll balls into logs about 2 1/2 - 3 inches in diameter. Wrap logs with nylon net. Place on broiler pan and cook 3-4 hours at 225 degrees. Remove net when cool enough to handle.
