PUMPKIN MUFFINS 
2 1/4 c. Oat Bran cereal
3 tbsp. brown sugar
1 tbsp. baking powder
1/2 tsp. nutmeg
1/4 c. raisins
1/2 c. canned pumpkin
1/2 c. frozen pineapple juice concentrate
1/4 c. skim milk
2 tbsp. vegetable oil
2 eggs

Mix ingredients in order given. Stir just well enough to mix everything. Fill muffin tins lined with paper liners to 3/4 full. Bake in oven preheated to 425 degrees for 15-17 minutes. Makes a dozen. May be stored in the refrigerator or freezer. Warm in microwave for 30 seconds to heat.

Since microwave ovens vary in power, you may need to adjust your cooking time.
