PUMPKIN BREAD 
3 1/2 c. all-purpose flour
1 1/2 tsp. salt
2 tsp. baking soda
3 c. sugar
1 1/2 tsp. nutmeg
4 eggs
1/2 c. water
2 c. cooked, mashed pumpkin or Libby's pureed pumpkin
2 tbsp. cinnamon
1 c. Crisco oil

Combine flour, salt, soda, sugar, nutmeg and cinnamon. Add to dry ingredients the eggs, water, oil and pumpkin. Mix well. Can use electric mixer or by hand.

Grease generously and sprinkle inside with sugar, three 1-pound coffee cans. Do not save sugar from recipe, use additional sugar. Bake in preheated 350 degree oven approximately 1 hour or until bread pulls away from side of cans. Check by inserting knife in center of bread. Knife should be clean after removing.
