RED SNAPPER EN PAPILLOTE 
2 lbs. red snapper fillets, or other fresh fillets
1 med. green pepper, sliced into rings
1 med. onion, sliced into rings
1/4 c. melted butter or soy butter
2 tbsp. lemon juice
1 tsp. tamari
1 tsp. paprika
1 slice fresh ginger, grated

Brush fillets with half the melted butter and sprinkle with seasonings. Saute onion, green pepper and ginger in rest of butter in large skillet for 5 minutes. Place fillets on top of vegetables, cover and cook for 10 to 15 minutes, until fish flakes with a fork.
