5 lbs. chopped meat 5 tsp. tender quick cure white salt 2 1/2 tsp. smoked salt 2 1/2 tsp. garlic salt 2 1/2 tsp. mustard seed 2 1/2 tsp. coarse pepper Mix like meat loaf, knead well and put in glass or stainless bowl with glass or stainless cover on top and let stand in refrigerator 24 hours. Remove and knead well and let stand in refrigerator another 24 hours. Remove and knead into 4 rolls and put on top of broiler pan and bake 8 hours at 175 degrees: Not in top of oven--just use the broiler pan so it will drip. Bake and store in refrigerator another 24 hours before trying and its complete. |
