FRIED GREEN TOMATOES 
Green tomatoes
Dark brown sugar
Flour
Onion, minced
Canned tomatoes

Cut firm green tomatoes into 1/2 inch thick slices. Dip slices into flour mixed with salt and pepper, coating slices on all sides. Fry slices in hot butter until browned on only one side. Fill shallow baking dish half full of canned tomatoes, put tomato slices on top. Sprinkle with salt, pepper and a little minced onion. Put 1 teaspoon brown sugar on each slice. Bake in hot oven at 400 degrees until dark brown for 15 to 20 minutes.
