JAMBALAYA 
4 lg. onions, chopped
3 cloves garlic, chopped
1 hen, cut up
1 pkg. smoked sausage
2 c. rice
3 c. water
Salt
chopped green onion
Red, black and white pepper

Fry chicken in own fat until brown in large heavy Dutch oven. Add onions and garlic. Fry until brown. Add water and simmer until tender - add sliced sausage. Cook 10 minutes longer. Let cool - debone chicken, skim fat off broth, bring back to boil. Add washed rice with green onion, salt and peppers. Cook about 30 minutes. Serves 6.
