PORK BLADE STEAKS 
4 pork blade steaks (cut 1/2 to 3/4-inch thick)
2 tbsp. lard
1 1/2 tsp. salt
1/4 tsp. pepper
4 slices onion (1/4-inch thick)
4 slices tomato (1/2-inch thick)
4 green pepper rings (1/4-inch)

Brown steaks in lard. Remove steaks from pan and arrange in shallow casserole or baking pan. Season with salt and pepper. Cover and bake in a 350°F oven for 30 minutes.

Remove from oven and place a slice of onion, a slice of tomato and a slice of green pepper on each steak. Cover and return to oven for another 15 minutes.
